Chicken Enchiladas with Red Mole

 


Here is the Feldy take on chicken enchiladas with red mole sauce. This recipe uses a slow cooker to simplify labor. For the mole I use the traditional trio of dried mulato, ancho, and pasilla chiles, stemmed and seeded. Add in the other 274 ingredients, cook, blend, cook some more, and there it is!
